Quello che oggi mi sembra quasi dimenticato, sommerso da una marea di gallette, focaccine, bocconcini e cracker (ovvero tutto ciò che non troverete in questo libro). E allora ho deciso di provare a raccontarlo, raccogliendo alcune delle tantissime tradizioni del pane italiano, che in pochi semplici ingredienti racchiude il piacere olfattivo, gustativo e visivo della vita. Sono partita in line with un viaggio alla ricerca dei panifici storici d'Italia, quelli che ancora oggi lo preparano con le tecniche di un pace. Poi, una volta tornata a casa, ho tirato fuori gli appunti, mi sono rimboccata le maniche e ho rifatto il pane da sola: non ci crederete, ma con qualche piccolo accorgimento il risultato è stato davvero eccellente!

Da grande golosa quale sono, non potevo certo limitarmi al pane. Mi sono chiesta: "E quando è pronto, sopra che cosa ci metto?!". Ho quindi selezionato, sperimentato e assaggiato una settantina di ricette, tutte da gustare rigorosamente insieme a questo meraviglioso nutrimento. Troverete bruschette, minestre, insalate, carni e pesci sugosi che richiedono a gran voce "la scarpetta", spesso preparati seguendo le indicazioni di grandi cuoche casalinghe, incontrate strada facendo, che mi hanno svelato i loro segreti. Sono partita dai robusti piatti di montagna dell'Alta Italia, in keeping with proseguire verso los angeles nebbiosa e operosa Valle del Po; ho assaporato i gusti decisi del Centro Italia in keeping with approdare alle sugose prelibatezze delle coste del Sud.
